Final Super Grain Raffle Winner Announced


Congratulations to the Henderson family from Nebraska!!!  They are the third and final winners of FitFactor’s super grain raffle.
Sarah Henderson submitted a photo of her children Lane and Paisley holding her prepared recipe of Apple Cinnamon Quinoa Cereal.  Their photo was chosen in a random drawing and they will receive a prize package of organic and natural foods courtesy of United Natural Foods, Inc.
Along with her photo, Sarah shared some information about how and why her family chooses to eat healthy.  “We have a family of five, four of whom are gluten-intolerant. We home school our 2 youngest, Lane, 5, and Paisley, 3. They both love to cook as many meals with me as I will allow. They love learning about new foods and having contests at the store to find the healthiest food. They can both tell you which are foods are protein, vegetables, fruit, and grains. When I told them we were going to enter in a raffle for healthy cooking, they were sure that we could win!”
“Our recipe is Apple Cinnamon Quinoa Cereal. We can use this as a replacement for a sugary breakfast, or even the oatmeal that we cannot eat. It contains quinoa, apples, and spices that make it taste like a warm apple pie breakfast cereal.”
Sarah was happy to share the recipe:

Apple Cinnamon Quinoa Cereal

1 cup uncooked quinoa
1 tbsp butter, divided
2 medium apples, peeled and chopped
1 1/2 cups cold water
1 tsp cinnamon
1/2 tsp apple pie spice
3 tbsp packed brown sugar
1/4 cup milk (we use goat milk due to allergies)

Soak uncooked quinoa in water for 5 minutes.
Melt 1/2 tbsp of butter in a hot skillet. Add the chopped apples and caramelize, about 5-10 minutes and stir occasionally. Set aside.
Rinse and drain the quinoa. Put the drained quinoa in a saucepan with 1 1/2 cups cold water. Bring to a boil and keep boiling for 1 minute. Reduce heat to low. Cover pan tightly and simmer for 10 minutes. Remove from heat. Fluff the quinoa with a fork. Add the remaining butter, cinnamon, apple pie spice, brown sugar, and milk. Fold in the apples.

Reheats very well too!
