Easy, Classic Chicken Noodle Soup

Bowl of chicken noodle soup being handed outWhen the frigid temperatures or a bout of the flu or a cold has you down, pamper yourself with an easy but classic bowl of chicken noodle soup. This soup is low in sodium, but rich in vitamins and protein. Whole wheat noodles add an additional benefit of fiber. A bowl of this comfort food might be just what you need to get you warmed up and back on your feet!
Easy Classic Chicken Noodle Soup
• One whole cut up chicken cover with water
• 1 cup chopped celery
• 1 cup chopped onion
• 1 cup chopped carrot
• ½ tsp pepper
• ½ tsp thyme
• 2 bay leaves
• 2 Tbsp chopped parsley
• 1 lb wide whole wheat noodles
Cook chicken in water with celery, onion, carrot & seasonings. Simmer one hour or until chicken is thoroughly cooked. Remove chicken, cool, discard skin and remove meat from bone. Return to soup stock, add parsley & reheat to a boil. Turn down to a simmer, add noodles. Cook until noodles are just tender.
