Home-Made Fruit Pizza a la HFA

Looking for a healthy way to satisfy both boredom and hunger?  Want to have a reply to the summer anthem of “Mom! I’m hungry and bored! “? Here is your solution.  Put your kids to work making their very own home-made fruit pizza.  Kids can create their own masterpiece by making their own crust, topping it with a Greek yogurt “sauce” and adding their choice of fresh fruit.  The kids at HFA’s Symposium 2014 whole heartedly give this recipe a two thumbs up!
Home-made Graham Pizza Crust for Fruit Pizza
1/2 cup butter
3/4 cup packed brown sugarfruit pizza
1 tsp vanilla extract
3 cups whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
1 1/2 tsp cinnamon
1/4 cup milk
*In a medium bowl, cream butter and sugar until well mixed then stir in vanilla.
*Combine flour, baking powder, baking soda, and salt.
*Stir milk and flour mixture alternately and mix until dough forms.
*Form the dough into a flat square, wrap it tightly with plastic wrap, and chill
until firm.
*Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and
set aside.
*On a lightly floured surface, roll out the dough to 1/8 inch thickness.fruit
*Cut out desired size rounds with a cookie cutter. 3-4 inch circles are perfect for
personal pizzas.
*Place 1/2 inch apart onto the prepared cookie sheets and bake 10-12
minutes or until crisp. Edges will be golden brown.
*Remove from baking sheet and cool on wire racks.
Greek Yogurt and Cream cheese “Sauce” for Pizza
6 ounces softened cream cheese
2/3 cups vanilla greek yogurt
*Mix together well, cover, and place in refrigerator until chilled.
Pizza Assembly
*Spread cheese mixture on graham crust and top with desired fruit.
